Texas Food Establishment Rules (TFER) requires training for all food handlersas well as advanced training for managers and/or supervisors as follows:
Food Handler Certification For all wait staff and kitchen staff.
Obtained from an accredited* source. Food handler certification is valid for two years. Certificates must be kept at the food establishment for review by the local health inspector.
Food Manager Certification For managers and/or supervisors.
Obtained from an accredited* source. Food manager certification is valid for five years. Certificate(s) must be posted in a conspicuous location.
*ACCREDITATION by either Texas Department of State Health Services (DSHS) or American National Standards Institute (ANSI).
